Pumpkin-Vanilla Pudding

š§āš³This super healthy pumpkin pudding makes a delicious anytime snack. Itās also great for refueling after a workout.
You can make up a batch ahead of time so they are ready to go whenever you need a sweet(ish) treat ā top with walnuts just before serving.
Pumpkin-Vanilla Pudding
(serves 1)
ā 6 oz (170 grams) nonfat Greek yogurt
ā ā cup (80 grams) 100% pumpkin puree
ā Dash of cinnamon
ā Splash of vanilla
ā 1 tsp maple syrup or honey (to taste)
ā 1 Tbsp toasted chopped walnuts
Combine the yogurt, pumpkin, cinnamon, vanilla, and maple syrup in a small bowl and mix until well combined. Top with the walnuts. š
