Fruit Compote
(6 servings)
● 3 cups (430 g) mixed berries (fresh or frozen)
● 2 tbsp orange juice
● Zest of half an orange
● ½ tsp cinnamon
● ½ tsp ground ginger
● 1 Tbsp maple syrup (optional)
● 1 Tbsp chia seeds
Place the berries, juice, zest, spices, and syrup to a saucepan and bring to a boil over medium-high heat. Stir occasionally to break up the berries and prevent scorching.
Once it reaches a boil, lower the heat to low and let simmer for about 10 minutes, stirring often, continuing to break up the fruit.
Remove from the heat and stir in the chia seeds. Let cool and pour into a storage container, and keep refrigerated for up to a week.
