Cheesy Eggs, Veggies, and Beans


šŸ˜‹This is one of those ā€œthrow-it-togetherā€ fast meals that make you go, ā€œYUM!ā€


PLUS ā€¦ itā€™s perfect for breakfast, lunch, or dinner.


Chances are you have the ingredients for this in your kitchen at all times.


If you donā€™t have any leftover veggies, you can use frozen or go without them.


Try this with cheddar, feta, or goat cheese ā€¦ or if you want to avoid the cheese, add a few healthy dashes of nutritional yeast.


BONUS: Itā€™s good for you, packed with protein and fiber.


Cheesy Eggs, Veggies, and Beans

(makes 1 serving)


ā— Nonstick spray

ā— Leftover veggies (or handful of salad greens)

ā— Ā½ cup (130 grams) canned beans

ā— 2 large eggs

ā— Ā½ oz (15 grams) cheese, grated


Heat a small skillet coated with nonstick cooking spray over medium heat. Add the veggies and beans and cook, stirring, until warm. Lower the heat.


Whisk the eggs together in a small bowl and add salt and pepper. Pour the eggs into the skillet, stirring until scrambled. Remove from the pan onto a plate and top with cheese.


Breakfast/lunch/dinner is served!
