🍑🥗 This salad recipe sounds a little strange but it’s surprisingly good.
It’s easy & simple enough for weekday meals and lunches … but delicious enough for entertaining.
BEET & PEACH SALAD
(makes 6 servings)
● 10 oz. (280 g) spring mix salad greens
● 3 medium ripe peaches, pitted and sliced
● ½ cup (120 ml) balsamic vinaigrette
● 14.5 oz (410 g) can sliced beets, drained
● ½ cup (56 g) crumbled goat cheese
● ½ cup (60 g) raw chopped pecans
In a serving dish, toss the greens and peaches with the balsamic vinaigrette. Top with the beets, cheese, and pecans. Serve immediately.
